Ingredients

  • 0.3 cup chili sauce 
  • tablespoons honey 
  • tablespoon soya sauce 
  •  chipotles in adobo chopped (from 7-ounce can)
  • teaspoons chiles in adobo sauce 
  • 0.3 teaspoon garlic powder 
  • 0.1 teaspoon pepper 
  • pounds chicken drummettes (20 to 24)
  • medium avocado pitted ripe peeled
  • tablespoons salad dressing 
  • 0.3 cup cilantro leaves fresh chopped
  • teaspoon juice of lime 
  • Dash salt 

Equipment

  • aluminum foil

Directions

  1. Mix all ingredients except drummies and Avocado Mayonnaise in shallow dish.
  2. Add drummies; turn to coat. Cover and refrigerate 30 minutes to marinate.
  3. Heat oven to 375°. Line jelly roll pan, 15 1/2x10 1/2x1 inch, with aluminum foil. Spray foil with cooking spray.
  4. Remove drummies from marinade; place in pan.
  5. Brush with remaining marinade.
  6. Bake 30 to 35 minutes or until chicken is no
  7. longer pink when centers of thickest pieces are cut.
  8. Meanwhile, make Avocado Mayonnaise.
  9. Serve with warm drummies.
  10. Refrigerate until serving.
