Ingredients

  • teaspoon baking soda 
  • 1.5 tablespoons butter softened
  • 0.3 cup buttermilk 
  •  eggs 
  • cups flour all-purpose
  • 0.3 cup powdered sugar sifted
  • tablespoons powdered sugar sifted
  • tablespoons raspberry nectar 
  • 0.8 cup raspberry preserves seedless
  • 0.5 teaspoon salt 
  • ounce bittersweet chocolate melted
  • cups sugar 
  • 0.5 cup cocoa unsweetened
  • teaspoons vanilla extract 
  • 0.8 cup vegetable oil 
  • cup water boiling
  • 0.8 cup whipping cream 
  • cups whipping cream

Directions

  1. Combine first 9 ingredients; beat at medium speed of an electric mixer 2 minutes. Stir in water.
  2. Pour batter into 2 greased and floured 8-inch round cakepans.
  3. Bake at 350 for 25 minutes or until a wooden pick inserted in center comes out clean. Cool in pans on wire racks 10 minutes; remove from pans.
  4. Let cool.
  5. Combine melted chocolate and raspberry nectar.
  6. Let cool. Beat butter at medium speed of electric mixer until fluffy.
  7. Add 2 tablespoons powdered sugar; beat until blended.
  8. Add chocolate mixture, beating well. Fold whipped cream into chocolate mixture.
  9. Stir preserves well. Slice each cake layer in half horizontally.
  10. Place 1 layer on plate; spread with 1/4 cup preserves.
  11. Spread one-third of chocolate mixture over preserves. Repeat with next 2 layers and remaining preserves and chocolate mixture. Top with fourth layer.
  12. Beat 2 cups whipping cream until foamy; add 1/3 cup powdered sugar, beating until soft peaks form.
  13. Spread on sides and pipe on top of cake.
