Ingredients

  • 1.5 cups brown sugar packed
  • 0.8 cup butter cubed
  • tablespoons water 
  • cups semi chocolate chips 
  • large eggs room temperature
  • cups flour all-purpose
  • 1.3 teaspoons baking soda 
  • teaspoon salt 
  • 0.3 cup butter softened
  • cups powdered sugar 
  • tablespoons milk 2%
  • 0.1 teaspoon peppermint extract 
  • Dash salt

Directions

  1. In a small saucepan, combine brown sugar, butter and water. Cook and stir over medium heat until sugar is dissolved.
  2. Remove from heat; stir in chocolate chips until melted and smooth.
  3. Transfer to a large bowl; cool slightly.
  4. Add eggs, 1 at a time, beating well after each addition.
  5. Combine flour, baking soda and salt; gradually add to chocolate mixture and mix well.
  6. Drop by rounded teaspoonfuls onto greased baking sheets.
  7. Bake at 350° until set, 8-10 minutes.
  8. Remove to wire racks; flatten slightly. Cool completely.
  9. Combine filling ingredients; spread on the bottoms of half of the cookies. Top with remaining cookies. Store in the refrigerator.
