Ingredients

  • ounces bittersweet chocolate 61% plus more for shaving chopped (do not exceed cacao)
  • large egg yolk 
  • 0.5 teaspoon gelatin powder unflavored
  • cup cup heavy whipping cream chilled divided
  • 48  ladyfingers soft
  • 1.8 cups mascarpone cheese divided
  • 1.5 cups strong coffee decoction 
  • 0.3 cup sugar 
  • tablespoons sugar 
  • 0.3 teaspoon vanilla extract

Directions

  1. Stir espresso and sugar in asmall bowl until sugar dissolves; set aside.
  2. Combine 1 cup mascarpone,2 tablespoons sugar, and vanilla in a smallbowl and whisk to blend; cover and chill.
  3. Place 1 tablespoon water in a small bowl.
  4. Sprinklegelatin over.
  5. Let stand until gelatin softens,10-15 minutes.
  6. Whisk the remainingsugar, yolks, 1/4 cup cream, and 1/4 cup waterin a medium metal bowl to blend.
  7. Placebowl over a large saucepan of boiling water(do not let bottom of bowl touch water)and whisk constantly until custard thickensand temperature reaches 160° on an instant-readthermometer, 3–4 minutes.
  8. Removebowl; add gelatin mixture and whisk untildissolved, 15–20 seconds. Return bowlover water, add chocolate, and whisk untilalmost melted, about 30 seconds.
  9. Set bowl in a large bowl of ice water andwhisk until chocolate is melted and custardis cool, 5-6 minutes.
  10. Whisk in the remainingmascarpone. In another medium bowl,beat remaining 3/4 cup chilled cream untilfirm peaks form. Fold cream into custard in2 additions to make a chocolate mousse.
  11. Spread 1/4 cup chocolate mousse in bottomof each of eight 1-cup teacups or ramekins.Dunk ladyfingers in the espresso syrupand arrange in a single layer on top of themousse, about 2 to 3 ladyfingers per cup.Repeat layering with chocolate mousseand soaked ladyfingers.
  12. Spread 2 tablespoons mascarpone topping over ladyfingers.
  13. Garnish with chocolate shavings and serve.
