  • teaspoon baking soda 
  • cup cane sugar raw (check the sugar if you are trying to keep it vegan)
  • 0.5 teaspoon cinnamon 
  • 0.3 cup cocoa 
  • tablespoons cocoa powder 
  • cup dairy free chocolate chips mini
  • tablespoons flax meal 
  • 2.5 cups flour all-purpose
  • 0.3 cup nondairy margarine melted
  • 0.3 teaspoon nutmeg 
  • cup powdered sugar 
  • 0.5 cup chocolate soymilk such as zensoy soymilk organic
  • teaspoon vanilla 
  • 0.3 cup vegetable oil 
  • tablespoons water 
  • cups zucchini grated

Directions

  1. Preheat oven to 350F, grease a 9X13” pan with nonstick spray.
  2. Mix flax and water in a small dish, set aside.Sift baking soda, flour, cocoa and spices, set aside.In a mixing bowl, mix margarine, oil, sugar, flax and water mixture and soymilk.
  3. Add the dry ingredients alternately with the zucchini, then fold in chocolate chips.
  4. Bake 35-45 minutes or until an inserted toothpick comes out clean, and drizzle with chocolate powdered sugar glaze if desired…enjoy!
