  • 0.5 cup beer 
  • tablespoons butter melted
  • large eggs 
  • cups flour all-purpose
  • 0.5 teaspoon coarsely ground pepper black
  • 24 servings hot sauce 
  • 12 ounce clams in juice undrained chopped canned
  • 24 servings malt vinegar 
  • 0.5 teaspoon salt 
  • 24 servings vegetable oil

Directions

  1. Drain clams, reserving 1/2 cup clam juice.
  2. Whisk together 1/2 cup clam juice, eggs, and butter in a small bowl. Stir in beer.
  3. Combine flour, baking powder, salt, and pepper in a large bowl.
  4. Whisk in egg mixture. Stir in clams.
  5. Heat 2 inches vegetable oil in a Dutch oven to 36
  6. Scoop heaping tablespoons of fritter batter and slide them into the hot oil. (Dip the spoon or small scoop into the oil first to prevent the batter from sticking to the spoon.) Cook 3 minutes, turning once, until golden brown.
  7. Drain on paper towels.
  8. Serve with malt vinegar and hot sauce.
