Ingredients

  • teaspoon baking soda 
  • cup butter softened
  • 0.5 cup buttermilk 
  • cup coca-cola 
  • 0.3 cup cocoa 
  • large eggs lightly beaten
  • cups flour all-purpose
  • 1.5 cups marshmallows miniature
  • 0.8 cup garnish: pecans toasted chopped
  • 1.8 cups sugar 
  • teaspoons vanilla extract

Directions

  1. Combine Coca-Cola and buttermilk; set aside.
  2. Beat butter at low speed with an electric mixer until creamy. Gradually add sugar; beat until blended.
  3. Add egg and vanilla; beat at low speed until blended.
  4. Combine flour, cocoa, and soda.
  5. Add to butter mixture alternately with cola mixture; begin and end with flour mixture. Beat at low speed just until blended.
  6. Stir in marshmallows.
  7. Pour batter into a greased and floured 13- x 9-inch pan.
  8. Bake at 350 for 30 to 35 minutes.
  9. Remove from oven; cool 10 minutes.
  10. Pour Coca-Cola Frosting over warm cake; garnish, if desired.
  11. Note: Don't make the frosting ahead--you need to pour it over the cake shortly after baking.
