  •  carrots grated
  •  cucumbers peeled seeded cut into matchsticks
  • 0.3 cup cilantro leaves fresh chopped
  • teaspoons ginger fresh chopped
  • clove garlic chopped
  • tablespoon brown sugar light packed
  • tablespoon rice vinegar 
  • 20 servings salt 
  •  scallions light white green finely chopped
  • tablespoon sesame oil 
  • tablespoon sesame seed 
  • 0.3 cup smooth peanut butter 
  • tablespoons soya sauce 
  • ounces pasta like spaghetti whole-wheat

Directions

  1. Puree peanut butter, garlic, ginger, soy sauce, rice vinegar and brown sugar in a blender until smooth. With blender running, pour in 1/4 cup hot water and blend until smooth.
  2. Bring a pot of salted water to a boil. Cook noodles until just tender, about 9 minutes.
  3. Drain, rinse under cold water and drain again.
  4. Transfer to a large bowl; toss with sesame oil.
  5. Toss scallions, cucumbers, carrots and sauce in bowl with noodles.
  6. Sprinkle with cilantro and sesame seeds.
