Ingredients

  • ounces rotini pasta uncooked (corkscrew)
  • cup cabbage shredded green finely
  • cup cabbage shredded red finely
  • cup apples red all-purpose unpeeled chopped
  • cup jicama peeled chopped
  • 0.3 cup sugar 
  • 0.3 cup water 
  • tablespoons apple cider vinegar 
  • 0.5 teaspoon mustard seeds 
  • 0.1 teaspoon salt

Directions

  1. Cook and drain pasta as directed on package; rinse and drain.
  2. Place pasta, cabbages, apple and jicama in large bowl.
  3. Mix sugar, water and vinegar in 1-cup microwavable measure. Cover with plastic wrap, folding back one side to vent. Microwave on High 1 to 2 minutes or until boiling; stir. Microwave uncovered 30 seconds longer. Stir in mustard seed and salt.
  4. Pour over cabbage mixture; toss.
  5. Cover and refrigerate about 2 hours or until chilled.
  6. Serve with slotted spoon.
