  •  carrots chopped
  • 0.5 cup cucumber peeled seeded chopped
  • 0.3 cup parsley fresh chopped
  •  garlic cloves minced
  • 0.3 cup green onions thinly sliced
  • 0.1 teaspoon coarsely ground pepper 
  • tablespoons juice of lemon 
  • 0.5 teaspoon lemon rind grated
  • 0.3 cup olive oil 
  • 1.5 cups orzo pasta uncooked
  • 0.3 cup purple onion chopped
  • 0.8 teaspoon salt 
  • tablespoons citrus champagne vinegar 
  • 1.3 cups bell pepper green red yellow chopped

Directions

  1. Cook orzo according to package directions; drain. Rinse with cold water; drain.
  2. Combine orzo, carrot, and next 5 ingredients; set aside.
  3. Combine lemon rind, lemon juice, vinegar, salt, coarsely ground pepper, and minced garlic. Gradually whisk in oil.
  4. Pour over orzo mixture, tossing gently. Cover and keep chilled.
