  • 15 ounce beans white rinsed drained canned
  • 0.8 cup carrots diced
  • 0.3 cup basil fresh chopped
  • clove garlic minced
  • 0.3 cup olive oil 
  • tablespoon oregano fresh chopped
  • 0.5 cup peas frozen thawed
  • 14.5 ounce canned tomatoes diced drained contadina® canned
  • tablespoons onion diced red finely
  • 0.3 cup red wine vinegar 
  • ounces rotini pasta dry
  • servings salt and pepper black to taste
  • tablespoons tomato paste contadina®
  • 0.8 cup bell pepper diced yellow
  • 0.8 cup zucchini diced

Directions

  1. Cook pasta according to package directions.
  2. Drain and rinse with cold water.
  3. Combine pasta and remaining salad ingredients, except Parmesan cheese, in a large serving bowl.
  4. Whisk together dressing ingredients in a small bowl.
  5. Pour over salad and mix well. Refrigerate at least 10 minutes for flavors to blend before serving.
  6. Serve with grated Parmesan cheese, if desired.
