Ingredients

  • teaspoons double-acting baking powder 
  • 0.5 cup bell pepper chopped
  • lb ground sausage italian
  • 15 oz tomato sauce canned
  • oz corn whole frozen thawed
  • 0.7 cup cornmeal 
  • large eggs 
  • 0.3 cup flour all-purpose
  • cloves garlic finely chopped
  • 0.5 cup milk 
  • 0.3 cup monterrey jack cheese shredded with jalapeño peppers (1 oz)
  • 4.5 oz mushrooms drained sliced
  • 0.5 cup onion chopped
  • 0.3 teaspoon salt 
  • tablespoon sugar 
  • tablespoons vegetable oil

Directions

  1. Heat oven to 400F.
  2. In 10-inch skillet, cook sausage, onion, bell pepper and garlic over medium heat 8 to 10 minutes, stirring frequently, until sausage is no longer pink; drain. Stir in tomato sauce, corn and mushrooms.
  3. Heat to boiling; remove from heat.
  4. In medium bowl, stir all topping ingredients except cheese. Beat vigorously with spoon 30 seconds. Stir in cheese.
  5. Spoon sausage mixture into ungreased 2-quart casserole.
  6. Pour topping over hot sausage mixture, spreading evenly.
  7. Bake uncovered 20 to 25 minutes or until topping is golden brown.
