Ingredients

  • tablespoon double-acting baking powder 
  • 0.5 cup egg substitute 
  •  egg whites 
  • cup flour all-purpose
  • 0.3 teaspoon ground pepper red
  • 0.8 cup milk 1% low-fat
  • tablespoons bell pepper red minced
  • teaspoon salt 
  • tablespoon vegetable oil 
  • 11 ounce kernel corn sweet whole drained canned
  • cup cornmeal yellow

Directions

  1. Combine first 7 ingredients in a large bowl; make a well in center of mixture.
  2. Stir together milk and next 3 ingredients.
  3. Add to flour mixture, stirring just until moistened. Spoon into muffin pans coated with cooking spray, filling two-thirds full.
  4. Bake at 375 for 20 minutes.
  5. Remove muffins from pans immediately, and cool slightly on wire racks.
