Ingredients

  • tablespoons double-acting baking powder 
  • 0.3 cup butter softened
  • cups cake flour sifted
  • 2.7 cups cornmeal 
  •  eggs 
  • 2.3 cups milk 
  • 1.5 teaspoons salt 
  • 0.3 cup sugar

Directions

  1. Cream butter; gradually add sugar, beating until light and fluffy.
  2. Add eggs, one at a time, beating well after each addition.
  3. Combine cornmeal, flour, baking powder, and salt; add to creamed mixture alternately with milk, beginning and ending with cornmeal mixture.
  4. Place a well-greased cast-iron cornstick pan in a 400 oven for 3 minutes or until hot.
  5. Remove from oven, and spoon batter into pan, filling two-thirds full.
  6. Bake at 400 for 20 minutes or until lightly browned.
