Ingredients

  • tablespoons butter 
  • large apples firm cored peeled sliced (Golden Delicious or Gala)
  • 0.8 cup brown sugar light packed
  • 0.3 cup rum extract dark
  • 0.5 teaspoon ground cinnamon 
  • 0.5 teaspoon nutmeg 
  • 0.3 teaspoon ground ginger 
  • 6.5 oz just-add-water cornbread mix 
  • 0.3 cup milk 
  • tablespoons butter melted
  •  eggs

Directions

  1. Heat oven to 375°F. Grease 8-inch square or round glass baking dish with shortening or cooking spray. In 12-inch skillet, melt 2 tablespoons butter over medium-high heat. Gently stir in remaining filling ingredients with wooden spoon. Cook about 5 minutes, stirring occasionally, until apples are tender.
  2. Pour into baking dish.
  3. In medium bowl, stir together cornbread topping ingredients.
  4. Spread over apples, covering them completely.
  5. Bake 20 to 25 minutes or until topping is golden brown.
