Ingredients

  • 0.3 cup butter softened
  • tablespoons butter melted
  • 0.3 cup chilis green canned drained chopped
  • 2.5 teaspoons coarse salt (kosher or sea)
  • 6.5 oz just-add-water cornbread mix 
  •  eggs 
  • 1.5 tablespoons maple syrup 
  • oz monterrey jack cheese shredded
  • 0.5 cup corn sweet cream-style canned

Directions

  1. Heat oven to 400F.
  2. Place foil baking cup in each of 10 regular-size muffin cups.
  3. In medium bowl, stir cupcake ingredients just until moistened. Spoon about 3 tablespoons batter into each muffin cup.
  4. Bake 12 to 15 minutes or until light golden brown. Immediately remove from pan. Cool 10 minutes.
  5. Meanwhile, in small bowl, beat softened butter and maple syrup with fork until well blended.
  6. Spread topping on each cupcake; sprinkle each with about 1/4 teaspoon salt.
