Ingredients

  • tablespoons agave syrup 
  • 1.5 cups all purpose flour 
  • tablespoon double-acting baking powder 
  • cups corn kernels frozen (unthawed)
  • 1.5 cups medium-grind cornmeal 
  • large eggs 
  • tablespoons brown sugar 
  • teaspoon salt 
  • 10 slices bacon thick-cut
  • tablespoons butter unsalted melted
  • 1.7 cups milk whole

Directions

  1. Cook bacon in large skillet over mediumheat until crisp.
  2. Drain on paper towels.Reserve 2 tablespoons drippings fromskillet. Crumble bacon into small pieces.
  3. Preheat oven to 350°F. Coat 12-inch diameterovenproof skillet with bacondrippings.
  4. Whisk cornmeal and next 4ingredients in large bowl.
  5. Whisk milk, eggs,honey, and butter in medium bowl. Stir milkmixture into dry ingredients.
  6. Mix in corn.
  7. Place prepared skillet in oven untilvery hot, about 10 minutes.
  8. Pour batter intoskillet.
  9. Sprinkle bacon over.
  10. Bake cornbreaduntil golden and tester inserted into centercomes out clean, about 50 minutes. Cool inskillet at least 30 minutes.
  11. Serve cornbreaddirectly from skillet. DO AHEAD: Can bemade 8 hours ahead. If desired, rewarmuncovered in 350°F oven 10 to 15 minutes.
