Ingredients

  • 40 servings biscuits hot
  • quarts cider vinegar 
  • 12 pound country ham uncooked

Equipment

  • oven
  • roasting pan
  • kitchen thermometer
  • aluminum foil

Directions

  1. Place ham in a large container.
  2. Add water to cover, and soak 24 hours.
  3. Drain. Scrub ham 3 to 4 times in cold water with a stiff brush, and rinse well.
  4. Place ham, fat side up, in a large roasting pan.
  5. Pour vinegar over ham; sprinkle with cloves. Cover with lid or aluminum foil.
  6. Bake at 325 for 4 hours or until meat thermometer registers 14
  7. Remove from oven, and cool slightly. Slice ham, and serve with hot biscuits.
