  • large eggs lightly beaten
  • tablespoon onion grated
  • tablespoons flour all-purpose
  • teaspoon salt 
  • 0.5 teaspoon double-acting baking powder 
  • serving vegetable oil for frying

Directions

  1. Finely grate potatoes.
  2. Drain any liquid.
  3. Add eggs, onion, flour, salt and baking powder. In a frying pan, heat 1/8 in. oil over medium-high to 375°.
  4. Drop batter by heaping tablespoonfuls in hot oil. Flatten into patties. Fry until golden brown, turning once.
  5. Serve immediately.
