  • 0.3 cup balsamic vinegar 
  • tablespoons olive oil extra-virgin
  • pound orzo pasta (see notes)
  • 0.5 cup parsley chopped
  • 0.5 cup roasted pistachios shelled chopped
  • 0.3 cup simple preserved lemons minced
  • oz radicchio thinly cored rinsed thinly sliced
  • 10 servings salt and pepper

Directions

  1. In a 5- to 6-quart pan over high heat, bring about 4 quarts water to a boil.
  2. Add couscous and cook just until tender to bite, about 6 minutes (10 for orzo).
  3. Drain and rinse under cold running water until cool.
  4. Meanwhile, in a large bowl, mix vinegar and olive oil.
  5. Add couscous, radicchio, pistachios, parsley, and preserved lemon.
  6. Mix gently to coat, adding salt and pepper to taste.
