  • cup couscous uncooked
  • 0.7 cup parsley fresh minced
  •  garlic clove minced
  • 1.5 cups grape tomatoes halved
  • tablespoons juice of lemon 
  • tablespoon olive oil extra-virgin
  • 0.3 teaspoon pepper 
  • 0.5 teaspoon salt 
  • 1.5 cups vegetable broth fat-free
  • 11 ounce kernel corn whole undrained canned

Directions

  1. Bring broth to a boil in a medium saucepan.
  2. Add couscous; stir well. Cover, remove from heat, and let stand 5 minutes.
  3. Transfer couscous to a large bowl, and fluff with a fork.
