Ingredients

  • 0.8 cup couscous uncooked
  • 1.3 cups less-sodium chicken broth fat-free divided
  • tablespoons basil fresh chopped
  • tablespoons parsley fresh minced
  • 0.3 cup golden raisins 
  • tablespoon juice of lime fresh
  • teaspoons olive oil extra-virgin
  • 0.3 cup onion finely chopped
  • 0.1 teaspoon pepper 
  • tablespoon pinenuts toasted
  • 0.3 teaspoon salt

Directions

  1. Combine 1/3 cup chicken broth, onion, and raisins in a medium saucepan. Bring to a boil; reduce heat, and simmer, uncovered, 5 minutes or until liquid is absorbed.
  2. Add remaining chicken broth and salt; bring to a boil. Stir in couscous.
  3. Remove from heat; cover and let stand 5 minutes.
  4. Fluff couscous mixture with a fork.
  5. Add parsley and remaining ingredients to couscous mixture; toss gently.
  6. Serve immediately.
