Ingredients

  • 0.7 cup couscous uncooked
  • 0.1 teaspoon coarsely ground pepper black
  • teaspoons juice of lemon fresh
  • 11 ounce mandarin oranges in syrup light undrained canned
  • tablespoons pistachios chopped
  • 0.3 teaspoon salt 
  • cup vegetable broth

Directions

  1. Bring broth to a boil in a medium saucepan; stir in couscous.
  2. Remove from heat; cover and let stand 5 minutes or until broth is absorbed.
  3. Drain oranges in a colander over a bowl, reserving 2 tablespoons syrup.
  4. Transfer couscous to a large bowl; fluff with a fork. Stir in 2 tablespoons orange syrup, lemon juice, and next 3 ingredients.
  5. Add reserved orange sections, and toss gently.
