Ingredients

  • 0.3 cup amaretto (almond-flavored liqueur)
  • 1.5 ounces chocolate wafers 
  • ounces cream cheese fat-free block-style
  • ounce block 
  • large eggs 
  • 0.3 cup flour all-purpose
  • cup curd cottage cheese 1% low-fat
  • 0.3 teaspoon salt 
  • tablespoons semisweet chocolate minichips 
  • cup sugar 
  • tablespoons cocoa unsweetened
  • teaspoon vanilla extract

Directions

  1. Preheat oven to 30
  2. Place wafers in a food processor, and pulse until coarsely ground.
  3. Sprinkle crumbs into bottom of an 8-inch springform pan coated with cooking spray.
  4. Place sugar and next 8 ingredients (sugar through cream cheese) in a food processor, and process until smooth.
  5. Add egg, and process until blended.
  6. Pour the cheese mixture into prepared pan, and sprinkle with minichips.
  7. Bake at 300 for 55 minutes or until the cheesecake center barely moves when pan is touched.
  8. Remove cheesecake from oven, and run a knife around outside edge. Cool to room temperature. Cover and chill at least 8 hours.
