Ingredients

  • loaf pumpernickel bread westphalian-style lightly toasted thinly sliced cut into triangles (such as pumpernickel)
  • cup celery finely chopped ( 2 stalks)
  • 0.3 cup chives fresh finely chopped
  • medium apples i use 2 granny smith apples cored peeled cut into matchstick-size strips
  • tablespoon horseradish fresh finely grated prepared peeled ()
  • 1.5 tablespoons juice of lemon fresh
  • 0.5 cup mayonnaise 
  • 11 ounces trout smoked flaked ( 3 fillets)
  • 0.5 cup cream sour

Directions

  1. Mix trout, apple, celery, and chives in large bowl to blend.
  2. Whisk sour cream, mayonnaise, lemon juice, and 1 tablespoon horseradish in small bowl to blend. Fold horseradish mixture gently into trout mixture (do not break up trout). Season to taste with salt, pepper, and more horseradish if desired. (Can be made 1 day ahead. Cover and refrigerate.)
  3. Transfer trout mixture to serving bowl and place on platter. Surround with toasts and serve.
