  • 10 ounce steam-in-bag cauliflower florets fresh
  • large eggs lightly beaten
  • teaspoons garlic fresh minced
  • tablespoons green onions minced
  • 0.8 cup hash brown potatoes shredded refrigerated
  • 0.6 teaspoon kosher salt divided
  • teaspoons juice of lemon fresh
  • 0.3 teaspoon lemon rind grated
  • tablespoons canola mayonnaise 
  • teaspoons olive oil 
  • 0.5 cup prechopped onion 
  • 0.3 cup greek yogurt plain 2%
  • 0.5 cup cheddar cheese shredded white
  • tablespoons flour whole-wheat

Directions

  1. Prepare cauliflower according to directions.
  2. Place in a bowl; mash with a potato masher. Stir in onion, flour, garlic, 1/2 teaspoon salt, pepper, rind, potatoes, cheese, and eggs. Form into 8 patties.
  3. Heat a large nonstick skillet over medium-high heat.
  4. Add oil; swirl. Cook patties 4 minutes on each side.
  5. Combine 1/8 teaspoon salt, yogurt, and remaining ingredients; serve sauce with fritters.
