Ingredients

  • 0.1 teaspoon pepper black freshly ground
  • 0.8 cup couscous uncooked
  • cup edamame frozen shelled thawed
  • 1.5 tablespoons parsley fresh minced
  • tablespoon juice of lemon fresh
  • 0.5 teaspoon lemon rind grated
  • 0.5 teaspoon salt

Directions

  1. Bring 1 cup of water and salt to a boil in a medium saucepan.
  2. Add the edamame, and cook 30 seconds. Stir in the couscous and the remaining ingredients.
  3. Remove the mixture from the heat, cover it tightly with a lid or aluminum foil, and let it stand for 5 minutes. Fluff with a fork before serving.
