Ingredients

  • 0.3 cup butter melted
  • cup self-rising cornmeal mix white
  • large eggs lightly beaten
  • 0.5 cup flour all-purpose
  • 0.3 cup chives fresh chopped
  • cups corn kernels fresh ( 8 ears)
  • tablespoons parsley fresh chopped
  • teaspoon thyme leaves fresh minced
  • cups yogurt plain
  • teaspoon salt 
  • tablespoons sugar 
  • 12 servings garnish: thyme sprigs fresh

Directions

  1. Preheat oven to 35
  2. Stir together first 4 ingredients in a large bowl; make a well in center of mixture. Stir together corn and next 6 ingredients; add to cornmeal mixture, stirring just until dry ingredients are moistened. Divide mixture among 12 (6-oz.) buttered ramekins.
  3. Bake at 350 for 35 to 40 minutes or until golden brown and set.
  4. Serve immediately.
