Ingredients

  • tablespoon butter melted
  • leaves boston lettuce 
  • 0.5 cup celery chopped
  • lb crab meat fresh white separated
  • oz yogurt plain fat free
  • teaspoons tarragon fresh chopped
  • cloves garlic crushed
  • 0.3 cup spring onion chopped (4 medium)
  •  lime wedges 
  • oz marinated artichoke drained chopped progresso®
  • tablespoons mayonnaise 
  • 0.5 teaspoon salt 
  •  portugese rolls split

Directions

  1. In large bowl, mix yogurt, mayonnaise, tarragon, salt and garlic. Stir until well blended. Stir in crab, artichoke hearts, celery and green onions. Cover and refrigerate about 30 minutes to blend flavors.
  2. Heat 10-inch skillet over medium-high heat.
  3. Brush melted butter on cut sides of rolls.
  4. Place cut sides down in skillet; cook about 2 minutes or until toasted.
  5. Place rolls on plates; fill with lettuce and crab mixture.
  6. Serve with lime wedge.
