  • teaspoons double-acting baking powder 
  • ounces cheese blue divided crumbled
  •  egg whites 
  • 0.3 cup flour all-purpose
  • 1.3 cups flour all-purpose
  • tablespoons butter 
  • cups pears peeled thinly sliced ( 3 medium)
  • 0.3 cup skim milk 
  • 0.7 cup sugar 
  • tablespoons sugar 
  • teaspoon vanilla extract

Directions

  1. Preheat oven to 35
  2. Combine 2/3 cup sugar, 1/2 cup blue cheese, and margarine in a bowl; beat at high speed of a mixer until smooth.
  3. Add milk, egg whites, and vanilla; beat well.
  4. Combine 1 1/3 cups flour and baking powder.
  5. Add to cheese mixture, stirring just until moistened.
  6. Spread batter into a 9-inch square baking pan coated with cooking spray. Arrange pear slices in a single layer in 3 rows on top of batter, pressing pear slices gently into batter.
  7. Combine 1/4 cup flour and 3 tablespoons sugar in a bowl; cut in remaining cheese with a pastry blender or 2 knives until mixture resembles coarse meal.
  8. Sprinkle over pears.
  9. Bake at 350 for 45 minutes or until browned.
  10. Serve warm.
