  • 0.5 teaspoon almond extract 
  • tablespoons amaretti cookie crumbs ( 16 small cookies)
  • tablespoons brown sugar 
  • cup pineapple fresh cubed (1-inch)
  • medium plum cut into 4 wedges

Equipment

  • skewers
  • broiler pan

Directions

  1. Combine first 4 ingredients in a bowl; stir well.
  2. Let stand 15 minutes.
  3. Remove fruit from bowl, reserving syrup.
  4. Thread pineapple cubes and plum wedges alternately onto 2 (6-inch) skewers. Prepare grill or broiler.
  5. Place kebabs on grill rack or broiler pan coated with cooking spray; grill or broil 4 minutes on each side or until thoroughly heated.
  6. Drizzle reserved syrup over kebabs; sprinkle with cookie crumbs.
  7. Serve with vanilla low-fat ice cream, if desired.
