Ingredients

  • 0.3 cup apple juice 
  • 0.1 teaspoon pepper black
  • 0.3 cup dates pitted chopped
  • teaspoon dijon mustard 
  • 0.3 cup golden raisins 
  • pound pork tenderloins trimmed
  • teaspoons olive oil 
  • 0.3 cup port wine sweet
  • 0.5 teaspoon salt divided
  • 0.3 cup water

Directions

  1. Cut the pork crosswise into 8 slices; sprinkle with 1/4 teaspoon salt and pepper.
  2. Heat oil in a large nonstick skillet coated with cooking spray over medium-high heat.
  3. Add pork; cook 2 minutes on each side or until browned.
  4. Add 1/4 teaspoon salt, dates, and remaining ingredients. Cover; simmer 2 minutes or until pork is done.
  5. Remove pork from pan. Bring date mixture to a boil; cook until reduced to 2/3 cup (about 5 minutes).
  6. Remove cloves; discard.
  7. Garnish with parsley sprigs, if desired.
