  • 2.5 cups asparagus (1-inch) ( 1 pound)
  • 0.5 teaspoon pepper black freshly ground
  •  garlic clove minced
  • 0.5 teaspoon kosher salt 
  • tablespoon kosher salt 
  • tablespoon lemon rind grated
  • cup lower-sodium chicken broth fat-free
  • tablespoons olive oil 
  • ounces garganelli pasta uncooked
  • ounce pecorino romano cheese fresh grated
  • tablespoons pecorino romano cheese fresh shaved

Directions

  1. Cook pasta in boiling water with 1 tablespoon kosher salt according to package directions, omitting additional fat.
  2. Drain.
  3. Heat a large skillet over medium-high heat.
  4. Add oil to pan, swirling to coat.
  5. Add asparagus to pan; cook 3 minutes or until crisp-tender, stirring occasionally.
  6. Remove from pan; keep warm.
  7. Add broth, lemon rind, and garlic to pan; cook until liquid is reduced to 1/2 cup (about 6 minutes). Return asparagus to pan.
  8. Add pasta, grated cheese, salt, and pepper; toss well.
