  • 0.5 cup green onions thinly sliced
  • tablespoons hoisin sauce 
  • tablespoons soya sauce low-sodium divided
  • cups napa cabbage chinese thinly sliced () (1 head)
  • cups shiitake mushroom caps thinly sliced ()
  • ounce soba noodles uncooked (buckwheat noodles)
  • cups turkey breast cooked chopped
  • cup rio sweet chopped ( 1 large)

Directions

  1. Heat oil in a large nonstick skillet over medium-high heat.
  2. Add mushroom, chopped onion, and carrot; saut 3 minutes.
  3. Add ginger; saut 1 minute. Stir in hoisin and 1 tablespoon soy sauce.
  4. Add broth and noodles; bring to a boil. Cover, reduce heat, and simmer 8 minutes or until noodles are done, stirring frequently.
  5. Place cabbage and turkey in a large bowl.
  6. Add noodle mixture to turkey mixture; toss gently to coat. Stir in remaining 1 tablespoon soy sauce and green onions.
