Ingredients

  • teaspoon double-acting baking powder 
  • 0.5 teaspoon baking soda 
  • 0.3 cup egg substitute 
  • 1.8 cups flour all-purpose
  • tablespoon juice of lemon fresh
  • 0.8 cup nonfat buttermilk low-fat
  • 0.3 cup orange juice concentrate frozen thawed
  • 0.3 cup orange marmalade spreadable fruit 
  • tablespoon orange rind grated
  • 0.3 teaspoon salt 
  • 0.3 cup sugar 
  • tablespoons vegetable oil 
  • tablespoon water

Directions

  1. Preheat oven to 40
  2. Combine first 5 ingredients in a medium bowl; make a well in center of mixture.
  3. Combine buttermilk and next 4 ingredients, stirring well; add to dry ingredients, stirring just until dry ingredients are moistened.
  4. Spoon batter into muffin pans coated with cooking spray, filling three-fourths full.
  5. Bake at 400 for 15 minutes. Do not remove muffins from pans.
  6. Combine marmalade, lemon juice, and water in a small saucepan; place over low heat until melted, stirring often.
  7. Drizzle glaze evenly over warm muffins in pans.
  8. Remove from pans, and cool completely.
  9. Glazed Citrus Mini-Muffins: Prepare batter as directed. Spoon into miniature muffin pans; bake at 400 for 14 minutes.
  10. Drizzle glaze over warm muffins in pans.
  11. Remove from pans, and cool completely.
