  • teaspoons double-acting baking powder 
  • 0.8 teaspoons baking soda 
  • cup buttermilk well-shaken
  • 0.5 teaspoon cinnamon 
  • large eggs 
  • cups flour all-purpose
  • cup golden raisins 
  • 0.3 cup honey 
  • 0.8 cup oat bran 
  • teaspoon salt 
  • 0.3 cup sugar 
  • 0.5 stick butter unsalted cooled melted

Directions

  1. Preheat oven to 375°F with rack in middle. Butter muffin pan.
  2. Whisk together flour, oat bran, sugar, baking powder, baking soda, salt, and cinnamon in a large bowl.
  3. In a separate bowl, whisk together buttermilk, honey, butter, and eggs.
  4. Add to dry ingredients along with raisins and stir until just combined.
  5. Divide batter among muffin cups.
  6. Bake until a wooden pick inserted into center of a muffin comes out clean, about 20 minutes. Turn out onto a rack to cool.
  7. Muffins keep in an airtight container at room temperature 3 days.
