  • 0.5 cup feta cheese crumbled
  • slices crusty baguette french
  • teaspoons thyme sprigs fresh minced
  • 1.5 tablespoons garlic minced
  • 0.5 cup spring onion sliced
  • tablespoon juice of lemon fresh
  • 0.3 cup olive oil divided
  • 0.3 cup parsley finely chopped
  • large plum tomatoes seeded finely chopped
  • teaspoon penzey's southwest seasoning 
  • 0.8 pound shrimp fresh deveined peeled

Directions

  1. Heat 1 tablespoon oil in a large skillet over medium-high heat. Saut shrimp and garlic 3 to 4 minutes until shrimp are cooked.
  2. Transfer to a small bowl and chill.
  3. Combine tomatoes, 1 tablespoon olive oil and next 6 ingredients in a large bowl; stir in shrimp. Refrigerate until ready to serve.
  4. Place bread slices on a baking sheet; brush bread with remaining olive oil.
  5. Bake at 375 for 8 minutes. Spoon 1 heaping tablespoon shrimp mixture onto each bread slice.
