Ingredients

  • tablespoons canola oil divided
  • tablespoon sesame oil dark
  • large eggs 
  • 0.5 teaspoon ginger fresh grated peeled
  • 1.5 tablespoons curry paste green
  • 0.3 cup green onions diagonally sliced
  • pound ground chicken breast 
  • 0.4 teaspoon kosher salt 
  • tablespoon lower-sodium soy sauce 
  • tablespoons canola mayonnaise 
  • 0.7 cup panko bread crumbs (Japanese breadcrumbs)
  • teaspoons sambal oelek fresh (ground chile paste)

Directions

  1. Place first 3 ingredients in a large bowl.
  2. Combine mayonnaise and the next 7 ingredients (through egg).
  3. Add mayonnaise mixture to chicken mixture; mix lightly until combined. Divide into 12 equal portions; gently shape each portion into a small patty (do not pack).
  4. Heat a large skillet over medium heat.
  5. Add 1 tablespoon canola oil to pan; swirl to coat.
  6. Add 6 patties to pan; cook 3 1/2 minutes on each side or until done.
  7. Remove from pan. Repeat procedure with remaining oil and patties.
