Ingredients

  • 0.5 pound bacon sliced
  • 10 ounce biscuits refrigerated
  •  to 2 chilies slit green seeded chopped
  •  eggs 
  •  jalapeno seeded chopped
  • 0.5 cup milk 
  • cup monterrey jack cheese shredded
  • tablespoons olive oil 
  • 0.5 medium onion chopped
  • teaspoon pepper 
  • teaspoon salt

Directions

  1. Prepare biscuits according to the directions on the package.
  2. Place bacon in a large, deep skillet. Cook over medium-high heat until evenly brown.
  3. Drain, and set aside.
  4. Heat olive oil in a large skillet over medium heat.
  5. Add onion, jalapeno, green chile, salt, and pepper. Fry, stirring, until onions are soft.
  6. Whisk together the eggs and milk; pour into the skillet. Stir frequently until eggs are scrambled and cooked through.
  7. Split biscuits in half.
