Ingredients

  • 0.5 cup peach preserves 
  • 0.3 cup juice of lime 
  •  chipotles in adobo canned seeded chopped
  • teaspoon chiles in adobo sauce canned (from can of chiles)
  • tablespoons cilantro leaves fresh chopped
  • 2.5 lb chicken breast boneless skinless
  • teaspoon highest available proof grain spirit 
  • 0.5 teaspoon ground cumin 
  • 0.5 teaspoon salt 
  •  peaches pitted cut in half and , if desired
  • serving thyme sprigs

Directions

  1. Heat gas or charcoal grill. In 1-quart saucepan, mix preserves, lime juice, chile and adobo sauce.
  2. Heat over low heat, stirring occasionally, until preserves are melted. Stir in chopped cilantro; set aside.
  3. Sprinkle chicken with garlic-pepper blend, cumin and salt.
  4. Place chicken on grill. Cover grill; cook over medium heat 15 to 20 minutes, turning once or twice and brushing with preserves mixture during last 2 minutes of grilling, until juice of chicken is clear when center of thickest part is cut (170°F).
  5. Add peach halves to grill for last 2 to 3 minutes of grilling just until heated.
  6. Heat any remaining preserves mixture to boiling; boil and stir 1 minute.
  7. Serve with chicken and peaches.
  8. Garnish with cilantro sprigs.
