Ingredients

  • 0.5 cup raspberries fresh unsweetened
  • small peaches fresh peeled sliced
  • tablespoons apple juice 
  • tablespoons honey 
  • 0.3 teaspoon salt 
  • 0.3 teaspoon pepper 
  • pound chicken breast halves boneless skinless
  • serving raspberries

Directions

  1. Place raspberries, peach slices, brandy and honey in blender or food processor. Cover and blend on high speed about 1 minute or until smooth.
  2. Heat blended mixture in 1-quart saucepan. Keep warm.
  3. Sprinkle both sides of chicken with salt and pepper.
  4. Brush grill rack with vegetable oil.
  5. Heat coals or gas grill for direct heat.
  6. Cover and grill chicken 4 to 6 inches from medium heat 15 to 20 minutes, turning once, until juice is no longer pink when centers of thickest pieces are cut.
  7. Spoon some of the raspberry sauce on serving plate.
  8. Place chicken on sauce.
  9. Drizzle with additional sauce.
  10. Garnish with additional raspberries.
