  • ounce prewashed baby spinach fresh
  • large eggs 
  • large egg whites 
  • ounce mushrooms assorted
  • 2.5 teaspoons olive oil divided
  • ounces parmesan divided freshly grated
  • 0.3 teaspoon pepper 
  •  pastry shell frozen such as wholly wholesome brand store-bought
  • 0.5 teaspoon salt divided
  •  shallots peeled thinly sliced
  • cup soy milk plain

Directions

  1. Preheat oven to 37
  2. Bake pastry shell for 1012 minutes or until browned.
  3. Remove shell from oven, and set aside. Leave oven on.
  4. Heat 1 1/4 teaspoons oil over medium heat in a large nonstick skillet; add shallots.
  5. Add spinach, and cook 23 minutes or until wilted.
  6. Add 1/4 teaspoon salt and a dash of pepper.
  7. Transfer to a plate; set aside
  8. Using the same pan, heat remaining oil, and cook mushrooms about 6 minutes or until browned on both sides.
  9. Remove from heat. Season with remaining 1/4 teaspoon salt and 1/4 teaspoon pepper.
  10. Sprinkle 1/3 cup Parmesan cheese over bottom of pastry crust. Top with spinach and mushrooms.
  11. In a separate bowl, whisk together soy milk with egg and egg whites.
  12. Pour into shell. Top with remaining 1/3 cup Parmesan, and bake for 4550 minutes or until top is firm and golden brown.
  13. Cut into wedges and serve.
