Ingredients

  • 0.5 cup apple sauce 
  • 1.5 teaspoons double-acting baking powder 
  • 0.5 teaspoon baking soda 
  • 0.3 cup buttermilk 
  •  egg yolk 
  • 2.8 cups flour all-purpose
  • 0.5 teaspoon ground cinnamon 
  • 0.5 teaspoon nutmeg 
  • tablespoons shortening 
  • 0.5 cup starter 
  • 0.5 teaspoon vanilla extract 
  • cups vegetable oil for frying
  • tablespoon water 
  • 0.5 cup granulated sugar white

Directions

  1. Heat deep-fryer to 375 degrees F (190 degrees C). In a small bowl, dissolve baking soda in warm water.
  2. In a large mixing bowl, cream shortening and sugar. Beat in egg yolks, Herman sourdough starter, buttermilk, vanilla extract, applesauce and dissolved baking soda.
  3. Mix together cinnamon, nutmeg, baking powder and flour. Stir flour mixture into the wet ingredients until smooth.
  4. Turn dough out onto a lightly floured surface and roll out to 3/4 inch thickness.
  5. Cut out the doughnuts and let stand for 10 minutes before frying.
  6. Heat deep-fryer to 375 degrees F (190 degrees C). Carefully slide doughnuts into hot oil. Fry until golden brown on both sides.
  7. Drain on paper towels and serve hot.
