  • 1.8 cups flour all-purpose
  • 0.5 cup golden raisins 
  • teaspoon ground cinnamon 
  • 0.5 cup honey 
  • teaspoons espresso granules instant
  • tablespoons butter melted
  • 0.3 teaspoon salt 
  • 0.5 cup sugar 
  • 0.5 cup walnuts chopped
  • 0.3 cup water hot

Directions

  1. Preheat oven to 32
  2. Coat an 8 x 4-inch loaf pan with cooking spray, and dust with breadcrumbs; set pan aside.
  3. Combine water and coffee granules, and set aside.
  4. Combine sugar and eggs in a medium bowl; stir well with a whisk.
  5. Add honey and margarine; stir well.
  6. Combine flour, baking powder, cinnamon, and salt.
  7. Add half of flour mixture to sugar mixture; stir well.
  8. Add coffee mixture; stir well.
  9. Add remaining flour mixture, and stir just until flour mixture is moist. Stir in walnuts and raisins.
  10. Spoon cake batter into prepared loaf pan, and bake at 325 for 1 hour and 20 minutes or until a wooden pick inserted in center of cake comes out clean. Cool cake in pan 10 minutes on a wire rack, and remove from pan. Cool cake completely on wire rack.
