Imagine biting into a dessert that perfectly balances the rich, tangy notes of cream cheese with the warm, tropical aroma of toasted coconut. This Honor Coconut Cake is a true celebration of texture and flavor, designed to impress anyone lucky enough to taste it. What makes this recipe truly special is the ingenious combination of a moist, fluffy coconut-infused cake base paired with a luxuriously smooth coconut crème filling that melts in your mouth. The cake itself is crafted with a blend of cake flour and all-purpose flour, ensuring a tender crumb that holds up beautifully against the generous layers of creamy goodness.

But the real magic happens when you consider the frosting. We aren't talking about a simple sugar coating; this is a decadent cream cheese buttercream that adds a sophisticated tang to cut through the sweetness of the coconut. The star of the show, however, is the homemade coconut crème filling. By slowly cooking heavy cream, sugar, and butter until they meld together, then thickening the mixture with a cornstarch slurry, you create a silky, pudding-like center that is far superior to any store-bought alternative. The process of gently toasting the shredded coconut until it turns a golden brown adds an essential nutty depth that elevates the entire flavor profile.

Perfect for gatherings, holidays, or simply treating yourself to something extraordinary, this recipe yields 24 perfectly portioned cupcakes that serve as a stunning centerpiece for any dessert table. With a calorie count that reflects its indulgent nature, every bite is a moment of pure joy. Whether you are a seasoned baker or a home cook looking to elevate your skills, the step-by-step process is approachable yet rewarding. The interplay of the warm, toasted coconut garnish against the cool, creamy frosting creates a sensory experience that lingers long after the last bite. Prepare to be amazed by this harmonious blend of classic comfort and tropical delight, a recipe that promises to become a cherished favorite in your kitchen.

Directions

  1. Preheat the oven to 350 degrees F. Line a muffin pan with 24 regular-size cupcake liners.
  2. Spread the shredded coconut on a baking sheet and lightly toast in the oven until golden brown, about 10 minutes.
  3. Remove and cool.
  4. In the bowl of an electric stand mixer fitted with a paddle attachment, combine the sugar, all-purpose flour, cake flour, baking powder and salt. On low speed, add the butter in small chunks. Then add the eggs one at a time, followed by the egg whites. In a small bowl, combine the milk and coconut extract.
  5. Add the mixture to the mixing bowl and mix until combined.
  6. Fill the cupcake liners approximately half full with batter and bake until the cupcakes are set and a toothpick is removed cleanly, 20 to 25 minutes. Cool the cupcakes completely.
  7. Once cooled, carve a shallow hole into each cupcake and fill with Coconut Creme Filling. Then, frost the cupcakes with the Cream Cheese Buttercream and garnish with toasted coconut.

  9. Whisk the cornstarch mixture into the hot liquid and bring to a boil. Continue cooking the mixture until thick, about 1 minute.
  10. Remove from the heat and stir in the coconut.
  11. Let the mixture cool completely before using.
  12. In the bowl of an electric stand mixer fitted with a paddle attachment, cream the butter and cream cheese until fluffy.
  13. Add the vanilla extract and salt. Gradually add the powdered sugar until desired consistency is reached.
