Ingredients

  • 0.5 cup butter 
  • cup spring onion sliced
  • small bell pepper green finely chopped
  • lb crawfish tails frozen thawed cooked peeled undrained
  • cloves garlic finely chopped
  • oz pimientos diced drained
  • teaspoons creole seasoning 
  • oz cream cheese cut into cubes
  • serving parsley fresh italian chopped (flat-leaf)
  • serving spring onion sliced
  • slices crusty baguette toasted

Directions

  1. In large saucepan, melt butter over medium heat.
  2. Add 1 cup onions and the bell pepper; cook 8 minutes, stirring occasionally, until bell pepper is tender. Stir in crawfish, garlic, pimientos and Creole seasoning; cook 10 minutes, stirring occasionally.
  3. Reduce heat to low.
  4. Add cream cheese; cook and stir until mixture is smooth and bubbly.
  5. Spoon dip into serving bowl.
  6. Garnish with parsley and additional onions.
  7. Serve hot with baguette slices.
