Ingredients

  • 0.3 cup neufcha@gtel cheese softened
  •  chocolate wafers such as nabisco famous crushed
  • 2.5 tablespoons egg substitute frozen thawed
  • tablespoon fudge topping fat-free hot warmed
  • tablespoons kahlua 
  • 0.3 cup curd cottage cheese 1% low-fat
  • tablespoons powdered sugar 
  • 0.5 teaspoon vanilla extract

  • muffin tray

Directions

  1. Coat 4 (2 1/2-inch) paper baking cups with cooking spray; sprinkle chocolate wafer crumbs evenly on bottom and up sides of paper cups.
  2. Place paper cups in muffin pan cups.
  3. Combine Neufcha@Gtel cheese and next 5 ingredients in container of an electric blender; cover and process until smooth, stopping once to scrape down sides. Spoon cheese mixture evenly over wafer crumbs.
  4. Bake at 350 for 20 minutes or until almost set.
  5. Remove from oven; let cool to room temperature on a wire rack. Cover and chill.
  6. To serve, remove paper liners, and place on serving plates.
  7. Drizzle evenly with hot fudge topping.
