Ingredients

  • 0.5 cup butter melted
  • 24 ounce cream cheese softened
  • large eggs 
  • cups graham cracker crumbs 
  • 0.5 cup key lime juice 
  • 1.5 teaspoons lime rind grated
  • halves lime zest 
  • ounce cup heavy whipping cream sour
  • 12 servings strawberry-vin santo sauce 
  • 0.3 cup sugar 
  • 1.3 cups sugar

Directions

  1. Stir together first 3 ingredients, and firmly press on bottom and 1 inch up sides of a greased 9-inch springform pan.
  2. Bake at 350 for 8 minutes; cool.
  3. Beat cream cheese at medium speed with an electric mixer until fluffy; gradually add 1 1/4 cups sugar, beating until blended.
  4. Add eggs, 1 at a time, beating well after each addition. Stir in sour cream, rind, and juice.
  5. Pour batter into crust.
  6. Bake at 325 for 1 hour and 5 minutes; turn oven off. Partially open oven door; let stand in oven 15 minutes.
  7. Remove from oven, and immediately run a knife around edge of pan, releasing sides.
  8. Cool completely in pan on a wire rack; cover and chill 8 hours.
  9. Garnish, if desired, and serve with Strawberry Sauce.
