Ingredients

  • 1.5 tablespoons active yeast dry
  •  egg yolks beaten
  • cups flour all-purpose
  • 0.5 cup fruit preserves 
  • 0.5 teaspoon lemon extract 
  • 2.5 cups scalded milk 
  • 1.5 teaspoons salt 
  • cup shortening 
  • 0.5 cup sugar white

Directions

  1. Cream shortening and sugar together. Stir in salt, hot milk, beaten egg yolks, and flavoring. When lukewarm, add yeast to mixture.
  2. Let stand 5 minutes.
  3. Add flour, beating well. Knead down into bowl. The dough will be slightly sticky.
  4. Let rise 1 hour.
  5. Cut off small balls of dough.
  6. Roll into rounds in your hands, and place on greased cookie sheets 2 inches apart.
  7. Let rise 15 minutes.
  8. Make a depression into the center of each roll. Fill with fruit preserves.
  9. Bake at 450 degrees F (230 degrees C) until brown. Watch carefully. Cool on wire racks.
