  • pound sweet potatoes peeled cut into 1 1/2-inch cubes
  • 0.3 cup vegetable oil

Directions

  1. Preheat oven to 325 degrees F.
  2. Season the lamb with salt and pepper.
  3. Heat oil in a tagine or Dutch oven over high heat. Brown lamb on all sides.
  4. Add remaining ingredients. Cover and cook in the oven for 3 hours. Turning once half way through cooking.
